Pu-erh

Pu-erh comes from Yunnan and is aged after production, either raw (sheng) or fermented (shu). Young sheng is bitter and bright; aged teas turn smooth, woody, and earthy. Shu pu-erh is dark, mellow, and drinkable right away.
