Aged Oolong
Aged oolong refers to roasted oolongs — often Wuyi yancha or Taiwanese rolled styles — that have been re-roasted and stored for years or decades. Over time the cup deepens into dark plum, dried fruit, camphor, and old wood, with a thick, warming body and a long, sweet finish. Good aged examples lose any harshness and gain a smooth, grounding character prized by experienced drinkers.
Da Hong Pao
Da Hong Pao is the most famous of the Wuyi 'rock teas' (yancha), grown on mineral-rich cliffs and traditionally charcoal-roasted. The cup is deep and layered: roasted stone fruit, dark mineral, and a warm cacao-like finish with a distinctive 'yanyun' rock rhyme minerality. It is bold yet smooth, and resteeps many times with evolving character.
